Bacon Wrapped Onion Rings

INGREDIENTS

  • 24 oz - Bacon

  • 2 - Onions (larger ones)

  • 3 T - Rodeo Rub

  • 1/2 Cup - Mayonnaise

  • 2 T - Honky Tonk Sauce

INstructions

  1. Preheat grill or smoker to 275 degrees, set to indirect heat 

  2. Peel onions and slice into 3/4” thick slices

  3. Use the outermost rings (easier to wrap), and in pairs of two to hold a better shape while cooking

  4. Wrap onion slices with bacon, using at least 2 bacon slices to wrap fully, and use toothpicks to hold if necessary

  5. Season them with Rodeo Rub on all sides

  6. Place onion rings over indirect heat but directly on the grates

  7. Smoke the onion rings for 45 mins and then flip

  8. Smoke an additional 40-50 minutes until desired texture

  9. Mix the Mayonnaise and Honky Tonk Sauce to use as a spicy dipping sauce and enjoy!
