maple bacon cookies

INGREDIENTS

  • 1/2 lb *Miesfelds Bacon 

  • 1/2 cup Softened Butter 

  • 1/2 cup White Sugar 

  • 1/2 cup Brown Sugar 

  • 1 Egg 

  • 1/2 tsp Vanilla 

  • 1 cup All-Purpose Flour 

  • 1/2 tsp Baking Soda 

  • 1/2 tsp Salt 

  • 1 tsp Cinnamon  

  • 1-1/2 C Quick Cook Oats

GLAZE ON TOP OF COOKIES

  • 1-3/4 cup Confectioners Sugar 

  • 3 tbsp Water 

  • 3 tbsp REAL Maple Syrup 

INstructions

  1. Fry bacon. Cool. Chop and set aside 

  2. Using an electric mixer at medium speed, beat the butter, sugar & brown sugar until fluffy. Mix in the egg and vanilla until combined. 

  3. In a separate bowl, whisk the flour, baking soda, salt, and cinnamon. Slowly stir in the dry ingredients. 

  4. Gradually stir in the oats and bacon. Refrigerate at least 1 hour 

  5. Preheat oven to 375°F. Thoroughly grease the cookie sheet 

  6. Scoop approx 1/4 cup of dough and roll into a ball. Use a fork dipped in water to slightly flatten the balls 

  7. Cook 10-12 minutes until golden brown. Allow to cool on the cookie sheet for several minutes before transferring to a cooling rack. 

  8. Mix all glaze ingredients until smooth.  Allow to firm for approx 5 minutes.  Drizzle glaze over cookies while on the cooling rack.
