Street Corn Stuffed Jalapeno Poppers
INGREDIENTS
1 lb Bacon
8 Jalapenos
8 oz Cream Cheese – Softened
4 oz Sour Cream
2 oz Cotija Cheese, Crumbled
¾ Cup Corn
Cilantro to your liking
3 Tbsp Elote Loco Street Corn Blend

INstructions
Pre-heat smoker to 350o
Combine softened cream cheese, sour cream, cotija cheese and Elote Loco Seasoning and mix until combined well.
Fold in corn and cilantro
Cut jalapenos in ½ lengthwise and remove pith and seeds
Stuff jalapenos with cream cheese mixture
Wrap each popper in with 1 slice of bacon
Top off each popper with a sprinkle of Elote Loco Seasoning
Put on smoker and cook for 40 minutes or until the bacon is done to your liking
Pull and let cool for 5 minutes before eating – the mixture will be HOT!
