Street Corn Stuffed Jalapeno Poppers

INGREDIENTS

  • 1 lb Bacon 

  • 8 Jalapenos 

  • 8 oz Cream Cheese – Softened 

  • 4 oz Sour Cream 

  • 2 oz Cotija Cheese, Crumbled 

  • ¾ Cup Corn 

  • Cilantro to your liking 

  • 3 Tbsp Elote Loco Street Corn Blend

INstructions

  1. Pre-heat smoker to 350o 

  1. Combine softened cream cheese, sour cream, cotija cheese and Elote Loco Seasoning and mix until combined well. 

  1. Fold in corn and cilantro 

  1. Cut jalapenos in ½ lengthwise and remove pith and seeds 

  1. Stuff jalapenos with cream cheese mixture 

  1. Wrap each popper in with 1 slice of bacon 

  1. Top off each popper with a sprinkle of Elote Loco Seasoning 

  1. Put on smoker and cook for 40 minutes or until the bacon is done to your liking 

  1. Pull and let cool for 5 minutes before eating – the mixture will be HOT!
