Pesto Shrimp Skewers

INGREDIENTS

  • 1 lb Large deveined, thawed shrimp

  • Extra virgin olive oil for fizzling

  • Richard Fergola – Buttery Garlic Rub

  • Freshly ground black pepper

  • ½ cup Pesto, plus more for serving

  • 3 lemons, halved

  • 8 skewers (if wooden soak for 20 minutes in water before cooking)

INSTRUCTIONS

  1. Preheat griddle on medium high heat for 5 minutes

  2. Put shrimp on skewers, drizzle with olive oil and sprinkle with *Richard Fergola – Buttery Garlic Rub brush with pesto and put on griddle

  3. Cook shrimp for 4 to 5 minutes or until they are opaque.  Pull from griddle and transfer to platter

  4. Cook lemons cut side down or until charred in a few spots, approx. 2 to 3 minutes.  Squeeze over shrimp before serving and place next to shrimp along side some extra pesto for serving.
