BBQ Chicken Bites

INGREDIENTS

  • 2 tbsp Butter

  • ¾ cup Shredded Chicken

  • 1 (12oz) Buttermilk biscuit dough

  • ½ cup shredded cheese

  • ¼ cup Three Little Pigs Competition Sauce

  • 2 tsp Honey Hog BBQ Rub

  • Rach dressing & BBQ sauce for dipping

INSTRUCTIONS

Pre-heat grill to 350o.  Grease cast iron skillet with butter.  In a medium bowl, combine chicken, BBQ sauce and Honey Hog Rub.

Flatten each biscuit round with your fingers until it is ¼” thick.  Spoon approximately 1 tbsp of chicken mixture in the center of each biscuit and top with shredded cheese.

Pull sides up and pinch together to form a ball and place seam side down in cast iron pan and place on grill.

In a small pan melt 2 tbsp butter and add 2 tsp Honey Hog Rub.  Brush tops of biscuits and place on grill and cook 10-12 minutes until lightly browned.

Brush with butter mixture again and cook for another 5 minutes until toasted and golden brown.

Transfer to platter and serve with ranch and BBQ sauce for dipping.
